<p>At Matthew Walker we love Christmas Puddings and firmly believe that it is the Pudding that makes Christmas dinner the festive high point of the day. The Christmas pudding captures all the excitement of Christmas as it makes its flaming entrance and captures sharing aspect as it is lovingly portioned out amongst all the family.

To Matthew Walker the Xmas Pud is the centre of our world, from January through to December, every hour of every day of every week of every month we are focussed upon Christmas Puds. From the first week of January every year we are making Christmas puddings. But it not just the manufacture of puddings. We spend a lot of our time travelling the world meeting with farmers and suppliers making sure we have the finest ingredients which deliver just the right texture and flavour but also meet our strict hygiene and quality standards. We also have our dedicated team of development experts who are constantly looking to refine and improve our puddings. The one area which doesn't change is the manufacturing process we always follow the traditional Christmas Pudding making method of steaming and allowed to cool slowly and naturally. This ensures that our puddings have the wonderful traditional moist eating sensation just like a home made Xmas pudding.

Matthew Walker is the world's oldest maker of Xmas Puddings and has been making them since 1899. The company started when Matthew Walker, a Derbyshire farmer's son, himself made puddings and preserves from his mother's special recipes and started to sell them from a friend's high class grocery store called 'Hodgkinsons'.
The sales of the Plum Puddings were so successful that Matthew Walker was able to set up a small factory in Exeter Street, Derby, which was gradually expanded to eventually take up most of the street. In the mid 1960's Derby City development plans necessitated a move and in 1967 Matthew Walker moved to a purpose built factory in Heanor, Derbyshire where it remains to this day.

The Christmas Pudding available from our site is know as The Pudding and maintains all the traditions both ingredients and cooking methods you would expect from the world's oldest Christmas pudding maker.

The Pudding is made to our recipe number 13,. Recipe number 13 is so named because it is based upon 13 traditional ingredients which according to folklore as said to represent Jesus and his 12 apostles. These 13 ingredients are
Sultanas, Raisins, Demerara Sugar, Currants, Glace Cherries, Stout, Breadcrumbs, Sherry, Vegetarian Suet, Almonds, Orange and Lemon Peel, Cognac, Mixed Spices.

Looking at some of these ingredients in more detail:

Sultanas : The finest Turkish sultanas are used. The word sultana comes from the female of the word Sultan. Sultanas have been grown in Turkey since the days of the Ottoman Empire. The Turkish sultanas come from seedless grapes that are grown in the Izmir area, once picked they are laid out in the Sun to dry naturally to preserve their natural sweetness & great sun washed colour.

Raisins: Turkish raisins - The grapes are all from the Thompson seedless grape variety which is renown for giving large juicy berries. Once the grapes are harvested they are laid out in the Sun to dry

Currants: The Vositsa currants are the smallest of the dried fruits used in our puddings The dark blue berries impart a great sweet flavour & help give the pudding texture. To be Vostisa currants they must be grown around the town of Aegean in Greece formally known in ancient times as Vostisa

Demerara Sugar : The natural brown colour & slightly caramel flavour of the sugar combines with the Vine fruit to give perfect sweetness to the Christmas pudding

Stout: Matthew Walker's earliest recipes for Christmas pudding use a fine Stout. The Stout selected for THE PUDDING is made in small brewery in one of Derbyshire's fine Country Houses - Thornbridge Hall The prize winning St Petersburg Stout has malt & chocolate with a coffee finish notes which combine perfectly with the sugar & fruit. St Petersburg has won 9 different SIBA and CAMRA awards in the past 18 months

Suet :Suet is one of the Classic ingredients of the Christmas pudding dating from the original recipes, rather than use a traditional suet we use a vegetarian suet so that Vegetarians can enjoy The Pudding along with everyone else.

Fresh Lemons and Orange peel have been used to give a fresh citrus flavour to our traditional pudding

Mixed spices from around the world have always been used in Christmas pudding The spices used in this pudding include - Cinnamon from Sri Lanka and Nutmeg & Cloves from Indonesia The spices help give THE PUDDING its mellow spicy flavour, which is a typical flavour of Christmas

The slowly fermented & double distilled white grapes from the famous Cognac region of France produce a Cognac that marries up perfectly with the dried fruit in the pudding giving a fantastic rounded alcohol flavour

Breadcrumbs: We only use fresh bread crumb to give the pudding a great texture
